Crispy Chicken Rice Salad

This is a perfect one for those that need meal prep but can't heat up their food. As much as salads in winter aren't appealing, this isn't your typical - crispy sesame rice, all the greens, chicken and a homemade creamy chilli sauce, delicious. This one packs so much flavour, nutrients and protein. Top tip: cook up 200g of rice the day before or earlier in the day so it's cooled before you cook. Day old rice works perfectly.

Turn cooking mode on

Step 1

Make the crispy rice by preheating the oven to 200 C and lining a tray with baking paper. Toss the cooled rice with soy sauce and sesame oil until coated then spread out evenly and bake for 30 to 40 minutes tossing halfway until golden and crispy.
