Chicken & Kimchi Fried Rice

If I need a quick whip up meal, this is the go-to in my house, and for good reason too.. Note: this recipe works best with day old rice. I cook mine up the day before, and leave it in the fridge (makes it much easier to chuck everything in together too).

Step 1

Spray a large, deep frying pan with low-calorie spray and place over a medium-high heat. Add the chicken, season with salt and black pepper, then add the white parts of the spring onions (set the green parts aside for garnish). Fry until the chicken is lightly browned.
